The unique universe of 3 very different champagnes each other and especially out of the paths beaten, a sincerity of terroir, a specific winemaker work, a real research of aromatic and gustative singularity and a communicative customization well chosen.

I highly recommend to try for the christmas holidays but not only: all year round! Enjoy tasting them listening to their music pairings (I chose the date of disgorgement voluntarily to make my chords because of very long gaps of breeding and commercial release instead of the date of the harvest unlike traditional wines)

Champagne J&H Fagot – Pinot noir Grand Cru – Extra brut

harvest 2012 – disgorged in December 2015 (dosage 3g/l)

This terroir of pinot noir is especially on the sub-region of Montagne de Reims of the commune Mailly-Champagne (Grand Cru) regardless of the domain that is at Rilly-La-Montagne.

Grapevariety: pinot black (black grape with colourless pulp giving a white juice because the skins do not have time to tint the juice during pressing)

Look of the bottle, sticker: lying in elegant, tapered warhead, printing of traditional clarity, collar practice at the opening.

Aromas: the light yellow color with golden highlights emanates from the perennial and its fusing fragrances of damson, orange, apple Canada, fig and notes of barley (opening 30 minutes before tasting)

Flavors: fresh, invigorating, very digestible mouth reveals a sleek, finely brioche structure whose final salted butter is coupled to the limestone minerality (T ° of service at 10-12 ° C approximately).

The ubiquitous dry guitar coupled with the surprising voice of frenchy fly over some riffs of strings to sound western supported by tenacious synths notes where the fusing caron rhythmic layer to the fresh aromatic developed champagne male sensuality. Champagne Jean Vignier – Silexus Sezannensis – Brut

harvest 2011 – disgorged beginning 2016 (dosage 5g/l)

The parcel terroir of 4 h chalky rich in flint located on the name Champagne to Les Côtes du Sézannais to the South of Epernay – Marne actually original rarity in this sector of the Chatet.

Grape variety: chardonnay

Look of the bottle, sticker: traditional, stylish print, rewarding cultural Latin designation to a sacred image.

Aromas: after a service in appropriate wineglass, the subtlety of the ineffable and moving fragrances according to temperature whereby it is tasted, spin notes linden focaccias, hawthorn, of pineapple, of fresh bread, whitepepper and a touch of lemon bark mineralized (opening 30 minutes beforetasting)

Flavors: the silky mouth on the citrus peels slightly candied fresh ginger slides with a delicious length sensual and feminine (T ° of service at 10-12 ° C approximately).

Throbbing powerful ropes, swing bass, Wurlitzer piano to the rounded notes backed by the rhythm afro funk perennial crowned with a black poetic voice merges by its harmonious harp, with complex moving and attractive of this rare champagne, where the almost unspeakable flavors penetrate with sensuality in our taste buds.

Champagne Dunoyer de Segonzac – rosé 1er Cru

2010 harvest – disgorged beginning 2014 (dosage 7,5g/l)

From a terroir chalky 1er Pierry Cru in the appellation of Vallée de la Marne to the southwest of Epernay Champagne, this extra crude rose wine to salmon color suggesting tile bright highlights, suffered the particularity of a pinot meunier wine lactic malo transformation stopped halfway in order to achieve a balance of clarification and customized without added expedition liqueur flavourings : the indicated dosage is due to the sugar of the grape itself.

Grape variety: 60% pinot meunier, 40% chardonnay

Look of the bottle, sticker: traditional, print design, clarity.

Aromas: the female nose reveals a brioche olfactory sensation of red fruit (strawberries into jam hot faintly sweet) and « pralines roses de Lyon » scented with violet just out of the oven (opening 30 minutes before tasting).

Flavors: the mouth fresh and graceful to subliminal notes of strawberries topping contrast with olfaction while keeping slightly buttered gluttony that transcends a cross-final between the pink grapefruit and tangerine (T ° of service at 10-12 ° C approximately).
