Grapes: semillon in massale
(a French organic wine on less than one hectare, based in the AOC Sainte Croix du Mont towards Langon in Aquitaine, of which Sophie and Sébastien Cantury are the winemakers)
Terroir: sandstone like the bottle!

The sommelier:
A wine made by fermentation. The skins of the white grapes are macerating in the juice.
The color of this hybrid wine is bright, orange with coppery reflections.
The nose is complex, vibrating with softwood aromas, kirsched notes, prune, bitter almond, walnuts, tea, orange peel, gentian root, dry datte. The ensemble is crowned with a thrilling subliminal oxidative finesse.
The mouth is fiery, mineral and its tasting could be like a black champagne with white without a bubble.

The colour and aromatic vivacity of the wine guides me towards a fresh and rhythmic composition in pairing.

The bouquet describes tonic and rich orients me towards a virtuoso composition contemporary jazz instrumental with tempo timed and fups.
The tasting is bursting with flavours with a well-capitalized acidity: it marries the soaring pianistic musical fervor where the dexterity of the double bass is modelled on the syncopated playof of a stainless drummer.
